Experts from the kitchen 👩🍳: No Bake Strawberry Cheese Cake 🎂

February is the month of love. Valentine’s Day is near and I am sure all the teenagers will be looking to show their love to their partners. Love is to be celebrated every day. When it’s such a positive emotion why just celebrate one day. For those who are extremely busy, I think it’s a good option to impress your love with this easy recipe of No Bake Cheese cake. Here I have tried to make it as easy as possible with all the hacks and tricks.
EASY No-Bake Strawberry Cheesecake that is whipped, creamy and loaded with fresh strawberry flavor. The amount of strawberries in the cheesecake is impressive and you will love the simple crust.
The recipe is divided into three steps –
Prepare the base
Prepare the middle layer
Prepare the top layer
NO BAKE CHEESECAKE
Preparation time: 1 hour
Cooking time: 20 minutes
Serving size: 8 pcs
Ingredients
1 cup Cream cheese, क्रीम चीज़
1 cup Hung curd, टंगा हुआ दही
1 cup Whipping cream, विपिग क्रीम
½ cup Sugar, चीनी
¼ tsp Lemon zest, लेमन जेस्ट
6 gms Agar agar/gelatin, soaked in 4 tbsp water, अगर अगर
⅓ cup Strawberry puree, स्ट्रॉबेरी प्यूरी
For Base
1 ½ cup Biscuits, crumbs, बिस्कुट
¼ cup Butter, मक्खन
Other Ingredients:
Strawberry slices
Fresh Mint leaves, पुदीना पता
Cocoa powder, कोको पाउडर
Icing sugar, आइसिंग शुगर
Pomegranate pearls, अनार के दाने
Process
Step 1: -
Prepare biscuit crumb or base –
In a bowl, add biscuits and crush them with a rolling pin or hands.
In a nonstick pan, add butter and let it melt completely.
Add biscuits crumbs and mix well until all the crumbs are nicely coated.
Press the crumb mixture into a cake tin, spreading evenly all the side; press flat. Chill crust in freezer for at least 10 minutes.
Step 2:-
In a large bowl, add cream cheese, hung curd, whipping cream and half the sugar.
Using an electric blender set at medium-high speed beat the cream cheese in a large bowl until smooth.
Add lemon zest and mix it well.
In a separate bowl, add agar agar to little water and soak in it for 5 minutes.
Keep a large pan on low heat, add little water, soaked agar agar, sugar and mix it well. Then add strawberry puree then switch off the flame and mix everything well.
Transfer this into a bowl; let it come to a room temperature.
Once the strawberry puree mixture is at normal temperature pour half of it into cream cheese mixture to get pink color and mix it well.
Pour the cream cheese mixture over the biscuit crust; smooth the top with a rubber spatula and refrigerate until firm, 1 to 1 ½ hours.
Take the cake out from the refrigerator and place on a cooling rack.
Step 3:-
Pour the remaining strawberry puree in the center over the cheesecake.
Cover it from all the sides evenly.
Garnish it with strawberry, fresh mint leaves, icing sugar and pomegranate pearls.
Cut it into a slice and serve.

Hack: for cheese cake special cake tins are used which can be opened from the side and only the bse remains. If you don’t have these cake tins then you can use simple disposable aluminium box where by you can tear the sides after freezing the cake.
